1 block (14 oz) firm tofu, drained and pressed

2 medium zucchinis, sliced into half-moons

1 bell pepper (choose red or yellow), sliced into strips

1 cup snap peas, trimmed

3 cloves garlic, minced

1-inch piece fresh ginger, grated

3 tablespoons soy sauce

2 tablespoons sesame oil

1 tablespoon rice vinegar

1 tablespoon honey (or maple syrup for a vegan alternative)

1 teaspoon cornstarch mixed with 2 tablespoons water (optional for thickening)

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Salt and black pepper to taste

Cooked rice or noodles (for serving)

Prep the Tofu: Start by pressing the tofu firmly to remove excess moisture, then cut it into bite-sized cubes. Season the cubes lightly with salt and black pepper to enhance the flavor.

    Heat the Pan: In a large non-stick skillet or wok, heat 1 tablespoon of sesame oil over medium-high heat until shimmering.

      Cook the Tofu: Gently add the cubed tofu to the heated skillet, cooking it until golden brown on all sides. This should take about 8-10 minutes. Once cooked, carefully remove the tofu from the pan and set it aside on a plate.

        Stir-Fry the Aromatics: In the same skillet, pour in the remaining tablespoon of sesame oil. Add the minced garlic and grated ginger, sautéing them for about 30 seconds until they release their aromatic fragrance.

          Add Zucchini and Peppers: Introduce the sliced zucchinis and bell peppers to the skillet. Stir-fry these vegetables for around 3-4 minutes until they become tender yet retain a nice crunch.

            Incorporate Snap Peas: Toss the trimmed snap peas into the skillet and gently stir to combine with the other vegetables. Cook everything together for an additional 2 minutes.
