2 medium zucchinis, grated

1 cup rolled oats

1/2 cup almond flour

1/2 cup shredded cheese (cheddar or mozzarella)

1/4 cup finely chopped green onions

2 large eggs

1/4 cup freshly grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 cup chopped fresh parsley (optional)

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Prepare a 9x9-inch baking dish by lining it with parchment paper, ensuring there's a slight overhang on the sides for easy removal later. Lightly grease the parchment with cooking spray or a drizzle of olive oil to prevent sticking.

    Prepare the Zucchini: Grate the zucchinis using a box grater or food processor until finely shredded. Transfer the grated zucchini to a clean kitchen towel or cheese cloth, gathering the edges together to form a pouch. Squeeze out any excess moisture—this step is crucial to prevent your bars from becoming soggy.

      Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, almond flour, and the shredded cheese. Add in the finely chopped green onions, garlic powder, onion powder, paprika, salt, black pepper, and parsley (if using). Stir the mixture until all dry ingredients are well distributed.
