2 medium zucchinis, grated

1 cup panko breadcrumbs (for extra crunch)

2 large eggs

1 teaspoon garlic powder

Preheat your oven to 425°F (220°C). Prepare a baking sheet by lining it with parchment paper and giving it a light spray of olive oil to prevent sticking.

    Place the grated zucchini into a clean kitchen towel or cheesecloth. Twist the cloth to squeeze out as much moisture as possible—this step is key for achieving that delightful crunch in your nuggets.

      In a large mixing bowl, combine the squeezed zucchini with the panko breadcrumbs, grated Parmesan cheese, eggs, garlic powder, onion powder, dried oregano, and a generous pinch of salt and pepper. Stir until the mixture is well-combined and uniform.

        With your hands, take small portions of the mixture (about 1 to 2 tablespoons each) and shape them into nuggets. Place each nugget onto the prepared baking sheet, leaving some space between them.
