2 medium zucchinis, grated

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 large egg, beaten

1/2 cup mini pepperoni slices

    Prepare the Zucchini: Grate the zucchinis using a box grater. After grating, transfer the zucchini to a clean kitchen towel or cheesecloth. Twist and squeeze to remove excess moisture, ensuring the zucchini is as dry as possible to achieve crispy bites.

      Mix the Batter: In a large mixing bowl, combine the drained zucchini with the shredded mozzarella cheese, grated Parmesan cheese, beaten egg, garlic powder, dried oregano, salt, and black pepper. Stir thoroughly until all ingredients are well incorporated into a cohesive mixture.
