Ingredients

1 pre-made pizza dough (store-bought or homemade)

1 medium zucchini, thinly sliced

1 cup fresh corn kernels (can substitute with canned or frozen, just make sure to drain them)

1 cup shredded mozzarella cheese

1/2 cup crumbled feta cheese

1 tablespoon olive oil

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon red pepper flakes (optional, for a spicy kick)

Salt and black pepper to taste

Fresh basil leaves for garnish (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 475°F (245°C). If you have a pizza stone, place it into the oven to heat up as well; this will help achieve a crispy crust.

Sauté the Vegetables: In a medium skillet, add the olive oil and heat over medium flame. Once hot, toss in the minced garlic and sauté for about 1 minute, just until it's fragrant and golden. Next, add the thinly sliced zucchini and corn kernels. Sprinkle with salt, black pepper, oregano, and red pepper flakes if you want a little heat. Stir and cook for 3-4 minutes, allowing the zucchini to soften slightly while still keeping some crunch. Remove from heat and set aside.

Prepare the Pizza Dough: On a clean, floured surface, take your pizza dough and roll it out into your preferred shape and thickness. A thinner crust works well if you enjoy a crispier bite, while a thicker crust will offer a chewier texture. If you're using a pizza stone, roll the dough out on a piece of parchment paper for easier transfer to the stone.

Assemble the Pizza: Carefully transfer the rolled dough to a pizza peel, or keep it on the parchment paper if you’re using a stone. Start by sprinkling a light layer of mozzarella cheese over the dough base. Then, equally distribute the sautéed zucchini and corn mixture on top of the cheese. Crumble the feta cheese evenly over the vegetables, followed by any remaining mozzarella cheese for added gooeyness.

Bake the Pizza: Gently slide the assembled pizza onto the preheated pizza stone. If you're not using a stone, place it on a baking sheet. Bake in the oven for about 10-12 minutes, or until the crust is golden brown and crispy, and the cheese is melted and bubbling.

Garnish and Serve: Once the pizza is done baking, pull it out of the oven and let it cool for a couple of minutes before slicing. If desired, garnish with fresh basil leaves for a pop of color and flavor. Cut into slices and enjoy while still hot.
