2 cups fresh pineapple, diced into small chunks

1/2 red onion, finely chopped

1 jalapeño, seeds removed and minced

1/4 cup fresh cilantro, roughly chopped

Juice of 1 lime

Salt and freshly cracked pepper, to taste

4 large flour tortillas

2 cups shredded Monterey Jack cheese

1 tablespoon olive oil, divided

1 avocado, sliced (for serving)

Sour cream (for serving)

Prepare the Pineapple Salsa: In a medium mixing bowl, combine the diced fresh pineapple, finely chopped red onion, minced jalapeño, and chopped cilantro. Squeeze in the lime juice, then season the mixture with salt and freshly cracked pepper. Stir well to combine and let the salsa sit for about 10 minutes to allow the flavors to meld together while you prepare the quesadillas.

    Assemble the Quesadillas: Heat a large non-stick skillet over medium heat. Add half of the olive oil to the skillet. Place one flour tortilla in the pan. Evenly sprinkle half of the shredded Monterey Jack cheese over the tortilla, then scoop half of the pineapple salsa over the cheese. Top with another layer of cheese for optimal meltiness. Finally, place a second tortilla on top to create a quesadilla sandwich.

      Cook the Quesadillas: Allow the quesadilla to cook for 3-4 minutes, or until the bottom tortilla turns golden brown and the cheese begins to melt. Carefully flip the quesadilla using a spatula, adding the remaining olive oil to the skillet. Cook for an additional 3-4 minutes until the second side is golden and the cheese is completely melted.

        Repeat Cooking: Once the first quesadilla is done, transfer it to a plate and keep it warm in a low oven (about 200°F) while you repeat the assembly and cooking process for the remaining tortillas, cheese, and pineapple salsa.
