Ingredients

1 lb large shrimp, peeled and deveined

Zest and juice of 2 limes

3 tablespoons fresh cilantro, finely chopped

3 cloves garlic, minced

1 tablespoon olive oil (plus extra for cooking)

1 teaspoon chili powder

½ teaspoon ground cumin

½ teaspoon salt

¼ teaspoon freshly ground black pepper

Pinch of red pepper flakes (optional, for added heat)

Lime wedges and additional cilantro for garnish

Instructions

Marinate the Shrimp: In a medium mixing bowl, combine the lime zest and lime juice along with the chopped cilantro, minced garlic, olive oil, chili powder, ground cumin, salt, black pepper, and red pepper flakes (if using). Mix thoroughly until all ingredients are well incorporated.

Add the Shrimp: Carefully add the peeled and deveined shrimp to the marinade. Gently toss until the shrimp are evenly coated with the marinade. Cover the bowl tightly with plastic wrap and place it in the refrigerator to marinate for at least 20 minutes. For a more intense flavor, marinate for up to 1 hour.

Heat the Skillet: In a large skillet, heat another tablespoon of olive oil over medium-high heat until it shimmers but does not smoke.

Cook the Shrimp: Once the oil is hot, remove the shrimp from the marinade, allowing any excess to drip off. Add the shrimp to the skillet in a single layer. Cook for 2-3 minutes on each side, or until the shrimp turn pink and opaque, reaching an internal temperature of 120°F.

Serve: Remove the skillet from the heat. Garnish the shrimp with additional chopped cilantro and lime wedges. Serve immediately over a bed of rice, quinoa, or nestled inside warm tortillas for a vibrant and flavorful meal!
