Ingredients

2 cups cooked chicken, shredded

1 cup salsa verde (store-bought or homemade)

1 cup shredded cheese (cheddar or Monterey Jack)

8 small corn or flour tortillas

1/2 cup sour cream

1/4 cup freshly chopped cilantro

1 teaspoon ground cumin

1 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and black pepper to taste

1 tablespoon olive oil

Optional toppings: diced avocado, sliced jalapeños, additional cilantro

Instructions

Preheat Your Oven: Begin by preheating your oven to 375°F (190°C) to ensure it’s ready for baking.

Prepare the Chicken Filling: In a large mixing bowl, combine the shredded chicken with 1/2 cup of salsa verde, 1/2 cup of the shredded cheese, ground cumin, garlic powder, onion powder, and a pinch of salt and pepper. Stir thoroughly until all ingredients are well blended.

Warm the Tortillas: In a skillet, heat the olive oil over medium heat. Lightly fry each tortilla for about 10-15 seconds on each side until they are warm and easy to handle. This step helps prevent the tortillas from cracking. Once warmed, remove the tortillas from the skillet and set them on paper towels to drain any excess oil.

Assemble the Enchiladas: Take a warmed tortilla and spoon about 2-3 tablespoons of the chicken filling into its center. Carefully roll the tortilla up tightly, sealing in the filling. Place the rolled enchilada seam side down in a greased 9x13 inch baking dish. Repeat this process with the remaining tortillas and filling until everything is used.

Top with Salsa Verde: Once the enchiladas are nestled in the baking dish, pour the remaining salsa verde evenly over the top. Sprinkle the remaining shredded cheese over the sauce for that delicious melty finish.

Bake Your Dish: Cover the baking dish with aluminum foil to keep the enchiladas moist. Bake in the preheated oven for 20 minutes. After that time, remove the foil and bake for an additional 10 minutes or until the cheese is bubbly and has turned a lovely golden color.

Serve with Style: Once baked, take the dish out of the oven and let it cool for a few minutes. Drizzle the enchiladas with sour cream and then sprinkle generously with chopped cilantro. Feel free to add any of your chosen toppings, like diced avocado or sliced jalapeños, for an extra kick!

Enjoy Your Meal: Serve these flavorful enchiladas hot, alongside a side of rice or a crisp, fresh salad for a delightful and satisfying meal.
