Ingredients

2 large cucumbers, diced

3 medium ripe tomatoes, diced

1 small red onion, finely chopped

1 bell pepper (red or yellow), diced

1 cup Kalamata olives, pitted and halved

1 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1 tablespoon fresh mint, chopped (optional)

1/4 cup extra virgin olive oil

2 tablespoons red wine vinegar

Juice of 1 lemon

1 teaspoon dried oregano

Salt and pepper to taste

Instructions

Prepare the Vegetables: Begin by rinsing the cucumbers and tomatoes under cold water to remove any dirt or residue. Using a sharp knife, dice the cucumbers and tomatoes into bite-sized pieces for easy eating. Finely chop the red onion and bell pepper. Once all the vegetables are prepped, combine them in a large mixing bowl.

Add the Olives and Cheese: Gently fold in the pitted and halved Kalamata olives along with the crumbled feta cheese into the bowl with the vegetables. These ingredients will add a delightful saltiness and richness to the salad.

Make the Dressing: In a separate small bowl, whisk together the extra virgin olive oil, red wine vinegar, fresh lemon juice, dried oregano, and a pinch of salt and pepper. Ensure that all components are well combined to create a zesty dressing that will enhance all the fresh ingredients.

Combine the Salad: Pour the dressing over the mixed vegetables, olives, and feta cheese. With a large spoon, gently toss all the ingredients together until everything is evenly coated with the dressing. Be gentle to avoid mashing the tomatoes and feta.

Garnish: To finish the salad, sprinkle the chopped fresh parsley and optional mint over the top. These herbs will add a pop of color and a bright, fresh flavor. Toss gently one last time to incorporate the herbs.

Chill and Serve: Allow the salad to sit for at least 15 minutes at room temperature or refrigerate it for up to an hour prior to serving. This resting period lets the flavors meld beautifully. Serve the salad either chilled or at room temperature for the best taste.

              Prep Time: 15 minutes | Total Time: 30 minutes | Servings: 4-6

Presentation Tips: Consider serving the salad in a large, colorful bowl to showcase the vibrant ingredients. You can also garnish individual servings with an extra sprinkle of feta and herbs for visual appeal. Enjoy!
