4 cups fresh watermelon, pureed and strained

2 tablespoons honey (or maple syrup for a vegan alternative)

Juice of 1 lime

4 ripe kiwis, peeled and diced

1 cup coconut water

1/2 cup Greek yogurt (or a dairy-free yogurt for a vegan option)

Fresh mint leaves for garnish (optional)

Instructions
 

In a high-speed blender, combine the pureed watermelon, honey, and lime juice. Blend on high until the mixture is smooth and well combined.

    Carefully pour the watermelon mixture into popsicle molds, filling each mold halfway.

      Place the molds in the freezer and allow them to set for about 1 to 2 hours, or until the watermelon layer is slightly firm to the touch.

        While the first layer is freezing, prepare the kiwi layer. In a mixing bowl, combine the diced kiwis with the coconut water and Greek yogurt. Stir gently until the ingredients are thoroughly blended.

          Once the watermelon layer has set, remove the molds from the freezer. Using a spoon, gently layer the kiwi mixture on top of the watermelon layer, filling the molds to the brim.

            Insert popsicle sticks into the molds, ensuring they are centered. Return the molds to the freezer and freeze for at least 4 hours or until the popsicles are completely solid.

              When you are ready to enjoy the popsicles, carefully run warm water over the outside of each mold for a few seconds to help loosen the popsicles.

                Serve the popsicles immediately, garnished with fresh mint leaves for a refreshing touch and an extra burst of flavor.
