Ingredients

2 cups rolled oats

2 teaspoons baking powder

1 teaspoon ground cinnamon

½ teaspoon salt

2 cups milk (your choice of dairy or non-dairy)

2 large eggs

¼ cup maple syrup (or honey)

2 teaspoons vanilla extract

2 medium apples, peeled, cored, and diced

½ cup walnuts or pecans, chopped (optional)

½ cup raisins or dried cranberries (optional)

2 tablespoons butter or coconut oil, melted

Additional cinnamon for sprinkling (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Grease a 9x13-inch baking dish with cooking spray or a light coating of butter to prevent sticking.

Mix Dry Ingredients: In a sizable mixing bowl, combine the rolled oats, baking powder, ground cinnamon, and salt. Mix thoroughly to ensure the baking powder is evenly distributed throughout the oats.

Whisk Wet Ingredients: In a separate bowl, crack in the eggs and whisk them together. Add the milk, maple syrup, vanilla extract, and melted butter or coconut oil. Mix until everything is well combined and smooth.

Combine Mixtures: Gradually pour the wet mixture into the bowl with the dry ingredients. Stir gently until just combined, being careful not to overmix. Fold in the diced apples, along with nuts and dried fruits, if you opt to use them.

Transfer to Dish: Pour the mixed oatmeal batter into the prepared baking dish, spreading it evenly across the bottom. If you like, sprinkle a little extra ground cinnamon on top for added flavor.

Bake: Place the baking dish in the preheated oven. Bake for 30-35 minutes, or until the top is set and lightly golden. To check for doneness, insert a toothpick into the center; it should come out clean.

Cool and Serve: Once baked, remove the dish from the oven and allow it to cool for about 10 minutes before slicing into squares. Serve while warm, adding a drizzle of maple syrup or a dollop of yogurt on top for an extra treat. Enjoy!
