Ingredients

1 cup elbow macaroni

1 tablespoon olive oil

1 small onion, finely chopped

2 garlic cloves, minced

1 red bell pepper, diced

1 zucchini, chopped

1 yellow squash, chopped

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) diced tomatoes (with juices)

1 cup vegetable broth

2 tablespoons chili powder

1 teaspoon ground cumin

½ teaspoon smoked paprika

Salt and pepper, to taste

1 cup shredded cheddar cheese (plus extra for topping)

1 cup corn kernels (fresh, frozen, or canned)

Fresh cilantro or parsley, for garnish (optional)

Cooking spray or muffin liners

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Prepare a muffin tin by lightly greasing it with cooking spray or lining it with muffin liners to ensure easy removal later.

Cook the Macaroni: In a large pot, bring water to a rolling boil. Once boiling, add the elbow macaroni and cook according to package instructions until it is just tender (al dente). Drain the macaroni thoroughly and set it aside.

Sauté the Vegetables: Heat a large skillet over medium heat and add the olive oil. When the oil is shimmering, toss in the chopped onion. Sauté for 2-3 minutes or until the onion becomes translucent and soft. Add the minced garlic to the skillet and continue cooking for an additional minute, allowing the garlic to become fragrant.

Incorporate More Veggies: Stir in the diced red bell pepper, chopped zucchini, and yellow squash into the skillet. Cook the mixture for 5-7 minutes, stirring occasionally, until the vegetables are tender yet still vibrant.

Combine Chili Ingredients: Add the drained black beans, kidney beans, diced tomatoes (including their juices), vegetable broth, chili powder, ground cumin, smoked paprika, and a generous pinch of salt and pepper. Mix everything well and bring the mixture to a gentle simmer. Let it simmer for about 10 minutes, allowing the flavors to deeply combine.

Mix in Macaroni and Cheese: After simmering, remove the skillet from the heat. Fold in the cooked elbow macaroni, corn kernels, and shredded cheddar cheese. Stir until everything is well combined and the cheese melts into the mixture, creating a deliciously cheesy filling.

Fill the Muffin Tin: Spoon the chili mac mixture into each cup of the prepared muffin tin, making sure to fill each cup to the rim. For an extra cheesy touch, sprinkle additional cheddar cheese on top of each filled cup.

Bake to Perfection: Place the muffin tin in the preheated oven and bake for 20-25 minutes. The tops should become golden and bubbly, creating a delightful crust.

Cool and Serve: Once baked, allow the chili mac cups to cool in the tin for about 5 minutes. This cooling period will help them firm up, making them easier to remove. Carefully take them out and place them on a serving platter.

Enjoy: Serve these warm chili mac cups as a fun appetizer, savory snack, or even as a hearty main dish. Optionally, garnish with fresh cilantro or parsley for a burst of color and freshness.

Prep Time: 15 minutes | Total Time: 45 minutes | Servings: 12 cups

Presentation Tips: Arrange the chili mac cups on a colorful platter and sprinkle with fresh herbs. Serve alongside a small bowl of salsa or sour cream for dipping. Enjoy this portable and delicious dish at your next gathering!
