1 cup mushrooms, finely chopped

1 can (15 oz) lentils, drained and rinsed (or 1.5 cups cooked lentils)

1 cup vegan BBQ sauce

1 tablespoon soy sauce or tamari

1 tablespoon apple cider vinegar

1 teaspoon smoked paprika

1 teaspoon ground cumin

1/2 teaspoon black pepper

Salt to taste

4 whole wheat burger buns

Fresh parsley or cilantro, for garnish (optional)

Heat the Oil: In a large skillet, heat the olive oil over medium heat. Once hot, add the diced onion. Sauté for about 3-4 minutes, stirring occasionally, until the onion becomes translucent and slightly tender.
