Ingredients

1 block (14 oz) firm tofu, pressed and cut into cubes

2 tablespoons olive oil

1 tablespoon soy sauce

1 tablespoon fresh lime juice

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup fresh pineapple, diced into small chunks

1 red bell pepper, sliced into thin strips

1 small red onion, thinly sliced

1 ripe avocado, sliced

8 small corn or flour tortillas

1/2 cup fresh cilantro, chopped

1/4 cup coconut yogurt or sour cream (optional)

Lime wedges, for serving

Instructions

Marinate the Tofu: In a large mixing bowl, whisk together the olive oil, soy sauce, fresh lime juice, ground cumin, smoked paprika, garlic powder, salt, and black pepper until well combined. Gently add the cubed tofu and toss until each piece is coated in the marinade. Allow the tofu to marinate for at least 15 minutes to absorb the flavors.

Prepare the Tropical Salsa: While the tofu is marinating, in another medium bowl, combine the diced pineapple, sliced red bell pepper, and thinly sliced onion. Season with a pinch of salt and lime juice, adjusting to taste. Mix well to combine all ingredients and set the salsa aside to allow the flavors to meld.

Cook the Tofu: Heat a non-stick skillet over medium-high heat. Once hot, add the marinated tofu cubes to the skillet. Cook for about 8-10 minutes, stirring occasionally, until the tofu becomes golden brown and slightly crispy on the outside.

Warm the Tortillas: In a separate skillet or over an open flame, warm the tortillas for about 30 seconds on each side until they are soft and pliable. This step is crucial for making them easy to fold when assembling the tacos.

Assemble the Tacos: On each warm tortilla, place a generous scoop of the cooked tofu first. Top with a spoonful of the tropical salsa, avocado slices, and a sprinkle of fresh cilantro for freshness. If you like, add a dollop of coconut yogurt or sour cream for added creaminess.

Garnish and Serve: Serve your Tropical Tofu Tiki Tacos immediately, garnished with lime wedges on the side for a zesty finish. Enjoy the vibrant flavors and tropical vibes!
