Tofu Skewers with Strawberry Salsa

1 block (14 oz) firm tofu, thoroughly drained and pressed

2 tablespoons extra virgin olive oil

2 tablespoons low-sodium soy sauce

1 tablespoon pure maple syrup

1 teaspoon garlic powder

1 teaspoon smoked paprika

Sea salt and freshly ground black pepper, to taste

Wooden or metal skewers (if using wooden skewers, soak them in water for 20 minutes prior to use)

For the Strawberry Salsa:

1 cup fresh strawberries, hulled and diced into small pieces

1/4 cup red onion, finely chopped

1 jalapeño, seeds removed and minced (optional for heat)

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Sea salt and freshly ground black pepper, to taste

Prepare the Tofu:

    - Start by cutting the pressed tofu into 1-inch cubes. Place them in a bowl and set aside for marinating.

      Marinate the Tofu:

        - In a medium mixing bowl, whisk together the olive oil, soy sauce, maple syrup, garlic powder, smoked paprika, along with salt and pepper to taste. Add the tofu cubes into the marinade, gently tossing to ensure each piece is thoroughly coated. For best results, allow the tofu to marinate for at least 30 minutes (or refrigerate for up to overnight for a richer flavor).

          Prepare the Strawberry Salsa:

            - In a separate bowl, combine the diced strawberries, finely chopped red onion, minced jalapeño (if using), chopped cilantro, lime juice, and a pinch of sea salt and black pepper. Gently toss to mix the ingredients together and allow the salsa to sit for a few minutes, letting the flavors meld perfectly.
