2 cups cooked jasmine rice (preferably day-old)

200 grams fresh crab meat (preferably lump or backfin)

2 tablespoons vegetable oil

3 cloves garlic, minced

2 large eggs, beaten

1 cup mixed vegetables (peas, diced carrots, and bell pepper)

3 green onions, finely chopped

2 tablespoons soy sauce

1 tablespoon fish sauce

1 tablespoon oyster sauce

1 tablespoon fresh lime juice

Salt and black pepper to taste

Fresh cilantro leaves, for garnish

Lime wedges, for serving

Sliced red chili (optional, for garnish)

Prepare the Rice: If using day-old rice, gently break up any clumps with a fork to separate the grains. If using freshly cooked rice, spread it out on a baking sheet and let it cool for about 30 minutes; this helps prevent the rice from becoming mushy during cooking.

    Cook the Eggs: In a large non-stick skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Pour in the beaten eggs and scramble until just set, taking care not to overcook. Once done, remove the scrambled eggs from the skillet and set them aside.

      Sauté the Aromatics: In the same skillet, pour in the remaining tablespoon of vegetable oil. Add the minced garlic and sauté for about 30 seconds, or until fragrant. Be vigilant not to let the garlic burn, as this will affect the dish’s flavor.

        Add the Mixed Vegetables: Toss in the mixed vegetables and stir-fry for 2-3 minutes, or until they are heated through and slightly tender while still retaining their crunch.
