1 can (15 oz) black beans, rinsed and drained

1 cup corn (fresh, frozen, or canned)

1 red bell pepper, diced into small pieces

1 small yellow onion, finely diced

2 cloves garlic, minced

1 ½ tsp chili powder

1 tsp ground cumin

½ tsp smoked paprika

½ tsp dried oregano

Salt and pepper, to taste

2 tbsp olive oil

1 cup salsa (choose mild or spicy based on your heat preference)

1 ripe avocado, diced

½ cup shredded cheese (cheddar or a Mexican cheese blend)

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Cook the Rice: Start by preparing the rice according to the package instructions. If opting for brown rice, it typically requires about 40-45 minutes to cook. Once finished, set it aside to keep warm.

    Sauté Vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper. Sauté for about 5 minutes, stirring occasionally, until the onion becomes translucent and the peppers soften.

      Add Garlic: Incorporate the minced garlic into the skillet and stir for an additional 1-2 minutes, allowing the garlic to release its aroma.

        Brown the Turkey: Increase the heat to medium-high. Add the ground turkey to the skillet, breaking it up with a wooden spoon. Cook for about 6-8 minutes, until the meat is browned and cooked through.
