2 large boneless, skinless chicken breasts

1 cup BBQ sauce (store-bought or homemade)

2 medium sweet potatoes, peeled and diced into 1-inch cubes

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

½ teaspoon salt

½ teaspoon black pepper

4 whole wheat tortillas

1 cup fresh baby spinach, washed and dried

½ cup shredded cheddar cheese

¼ cup green onions, finely chopped (optional for garnish)

Instructions
 

Cook the Sweet Potatoes:

    - Preheat your oven to 400°F (200°C).

      - In a large mixing bowl, combine the diced sweet potatoes with olive oil, smoked paprika, garlic powder, salt, and black pepper. Toss everything thoroughly until the sweet potatoes are evenly coated.

        - Spread the seasoned sweet potatoes in a single layer on a baking sheet. Roast in the preheated oven for 25-30 minutes, or until tender and slightly caramelized, flipping them halfway through the cooking time to ensure even roasting.

          Grill the Chicken:

            - While the sweet potatoes are roasting, heat a grill pan or outdoor grill to medium heat. Season both sides of the chicken breasts with salt and black pepper.

              - Place the chicken on the grill and cook for approximately 6-7 minutes on each side, or until they are fully cooked with an internal temperature of 165°F (75°C).
