1 can (15 oz) black beans, drained and rinsed

1 cup corn (fresh, frozen, or canned)

1 medium onion, finely chopped

2 cloves garlic, minced

1 packet taco seasoning (or homemade mix: 1 tablespoon chili powder, 1 teaspoon cumin, 1 teaspoon paprika, 1 teaspoon onion powder)

1 cup diced tomatoes (fresh or canned)

1 cup shredded cheese (cheddar or Mexican blend)

1 avocado, diced

1/4 cup fresh cilantro, chopped

Sour cream or Greek yogurt for topping (optional)

Salt and pepper to taste

Prepare the Sweet Potatoes: Preheat your oven to 400°F (200°C). Thoroughly wash the sweet potatoes and use a fork to poke several holes in each one.
