Ingredients

1 lb boneless, skinless chicken breasts

2 medium zucchinis, spiralized (zoodled)

1 cup cherry tomatoes, halved

1 cup corn (fresh or frozen)

1 can black beans, rinsed and drained

1 tablespoon olive oil

1 packet taco seasoning (or homemade blend)

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

1 ripe avocado, diced

1/4 cup fresh cilantro, chopped

1 lime, cut into wedges

Optional toppings: shredded cheese, sour cream, jalapeños, salsa

Instructions

Prepare the Chicken: Begin by heating the olive oil in a large skillet over medium-high heat. While the oil heats, generously season both sides of the chicken breasts with taco seasoning, garlic powder, onion powder, salt, and pepper. Once the oil is shimmering, carefully add the seasoned chicken to the skillet. Cook for approximately 6-7 minutes on each side, or until the chicken is thoroughly cooked and no longer pink at the center. After cooking, remove the chicken from the skillet and let it rest on a cutting board for a few minutes.

Zoodle Preparation: While the chicken cooks, spiralize the zucchinis to create zoodles. If you do not have a spiralizer, you can alternatively use a vegetable peeler to create thin strips resembling noodles.

Cook the Zoodles: In the same skillet used for the chicken, add the zoodles and sauté them for 2-3 minutes, stirring occasionally, until they become tender yet retain a slight crunch. Avoid overcooking, as this can lead to mushy zoodles. Once ready, remove the zoodles from the skillet and set them aside.

Combine Ingredients: In the same skillet, add the halved cherry tomatoes, corn, and black beans. Cook these ingredients together for approximately 3-5 minutes until they are nicely warmed through, stirring occasionally to ensure even heating.

Slice the Chicken: After resting, slice the cooked chicken into strips or bite-sized pieces for easy assembly.

Assembly: To build your bowls, start with a generous portion of zoodles as the base. Layer on the sliced chicken followed by the warm corn and bean mixture, halved cherry tomatoes, and diced avocado.

Garnish: Finish your bowls by sprinkling with chopped cilantro. Serve with lime wedges on the side for a fresh squeeze of flavor. You can also add any optional toppings you desire, such as shredded cheese, dollops of sour cream, jalapeños for heat, or your favorite salsa.

Serve: Enjoy your vibrant and flavorful Taco Chicken Zoodle Bowls immediately, enhancing each bite with a squeeze of fresh lime juice for an irresistible burst of zesty goodness!
