Ingredients

2 cups rolled oats

1 ½ cups almond milk (or your preferred milk)

1/3 cup maple syrup (or honey for a different sweetness)

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon salt

1 cup fresh strawberries, diced

1/4 cup almond butter (or substitute with peanut butter)

1/4 cup chopped nuts (such as walnuts or almonds) for topping

Optional: Greek yogurt or plant-based yogurt for serving

Instructions

Preheat and Prepare: Start by preheating your oven to 350°F (175°C). Grease a muffin tin using cooking spray or line it with silicone muffin cups for easy removal after baking.

Mix the Base: In a large mixing bowl, combine the rolled oats and almond milk. Add in the maple syrup, vanilla extract, ground cinnamon, and salt. Stir all the ingredients together until everything is evenly mixed and integrated.

Add Strawberries: Carefully fold in the diced strawberries, ensuring they are evenly distributed throughout the oat mixture without crushing them.

Fill Muffin Cups: Pour the oat mixture into the prepared muffin tin, filling each cup about 3/4 full. Use a spoon to gently press down on the mixture to keep it compact.

Add Toppings: Drizzle a small amount of almond butter over the tops of each oat cup. Then, sprinkle chopped nuts on top to add texture and flavor.

Bake: Place the muffin tin into the preheated oven and bake for approximately 20-25 minutes, or until the tops are golden brown and the oat cups are firm to the touch.

Cool and Serve: Once baked, let the oat cups cool in the muffin tin for about 10 minutes. Carefully transfer them to a wire rack to cool completely. Enjoy them warm or at room temperature. Serve with a dollop of Greek yogurt or plant-based yogurt if you like!
