1 lb ground turkey

2 medium sweet potatoes, peeled and diced

1 medium onion, chopped

2 cloves garlic, minced

1 bell pepper (any color), chopped

1 cup black beans, drained and rinsed

1 tsp smoked paprika

1 tsp ground cumin

½ tsp chili powder

½ tsp salt

¼ tsp black pepper

2 tbsp olive oil

½ cup corn (fresh or frozen)

Fresh cilantro, chopped (for garnish)

Optional: 1 avocado, diced (for serving)

Prepare the Sweet Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Once hot, carefully add the diced sweet potatoes. Sauté for about 10-12 minutes, stirring occasionally, until they become tender and start to develop a golden-brown crust. Once cooked, transfer the sweet potatoes to a plate and set them aside.

    Cook the Vegetables: In the same skillet, add the remaining tablespoon of olive oil.
