Ingredients

1 medium sweet potato, peeled and cubed

1 ripe avocado

2 slices of whole-grain or sourdough bread

1 tablespoon olive oil

Salt and pepper, to taste

1 teaspoon smoked paprika or cayenne pepper (optional, for added spice)

Juice of 1/2 lime

Fresh cilantro or parsley, for garnish

Red pepper flakes, for garnish (optional)

Instructions

Prepare the Sweet Potato:

    - Fill a medium pot with water and bring it to a rolling boil. Carefully add the cubed sweet potato to the pot. Parboil the cubes for about 5-7 minutes, or until they are tender but still hold their shape. Be cautious to avoid overcooking. Once ready, drain the sweet potatoes and set them aside to cool slightly.

      Toast the Bread:

        - While the sweet potatoes are cooling, take your slices of whole-grain or sourdough bread and toast them until they are golden brown and crispy. This can be done in a toaster or in a skillet over medium heat for a bit of a charred flavor. Set the toasted bread aside.

          Prepare the Avocado Spread:

            - In a small mixing bowl, use a fork to mash the ripe avocado until it reaches a creamy consistency. Squeeze in the lime juice and season with salt, pepper, and smoked paprika (if desired). Stir the mixture thoroughly until all ingredients are well combined.

              Combine Sweet Potatoes:

                - Once the sweet potatoes have cooled, transfer them to a bowl and drizzle with olive oil. Season with salt and pepper to taste, tossing gently to ensure the olive oil coats the sweet potatoes evenly.

                  Assemble the Toast:

                    - Spread a generous layer of the creamy avocado mixture onto each slice of toasted bread. Top each slice with an even layer of the seasoned sweet potatoes, creating a delightful contrast of flavors.

                      Garnish:

                        - For the finishing touch, sprinkle freshly chopped cilantro or parsley over the top of each toast. If you enjoy heat, add a pinch of red pepper flakes for an extra kick.

                          Serve:

                            - Serve the sweet potato and avocado toast immediately for the best flavor and texture. Enjoy the delightful combination of creamy, savory, and slightly sweet tastes!
