2 ripe mangoes, peeled, pitted, and diced

1 cup plain Greek yogurt (or substitute with dairy-free yogurt for a vegan version)

1/2 cup canned coconut milk (for a richer, creamier texture)

3 tablespoons honey or maple syrup (adjust sweetness according to preference)

1 teaspoon pure vanilla extract

1 tablespoon freshly squeezed lime juice

A pinch of sea salt

Optional: Chopped fresh mint leaves for garnish

Prepare the Mango: Begin by peeling the ripe mangoes and cutting them into small dice. For a silkier texture, consider blending the mangoes in a blender or food processor until they reach a smooth puree consistency.

    Mix Ingredients: In a medium mixing bowl, combine the diced mango (or mango puree) with the Greek yogurt, coconut milk, honey (or maple syrup), vanilla extract, fresh lime juice, and a pinch of sea salt. Using a whisk or spatula, blend until the mixture is completely smooth and well integrated.

      Taste Test: Take a moment to taste your mixture. Feel free to adjust the sweetness to your liking by adding additional honey or maple syrup if desired.

        Pour into Molds: Carefully pour the mango yogurt mixture into your popsicle molds. Leave a small gap at the top of each mold to allow for expansion as the mixture freezes. If using popsicle sticks, insert them into the molds now.
