1/4 cup granulated sugar

1 tablespoon baking powder

1 cup buttermilk (or substitute with regular milk mixed with 1 tablespoon vinegar)

1/3 cup unsalted butter, melted

2 large eggs

1/4 cup honey

1/2 cup corn kernels (fresh or frozen, optional)

Extra honey for drizzling (about 1/4 cup, for serving)

Preheat the Oven: Preheat your oven to 400°F (200°C). Prepare a 9-inch cast iron skillet or a square baking dish by greasing it thoroughly with butter or non-stick spray to prevent sticking.

    Mix Dry Ingredients: In a large mixing bowl, combine the cornmeal, all-purpose flour, granulated sugar, baking powder, and salt. Use a whisk to mix together these dry ingredients until they are well blended and evenly distributed.

      Combine Wet Ingredients: In a separate medium bowl, whisk together the buttermilk, melted butter, eggs, and honey until the mixture is smooth and well combined.

        Combine Mixtures: Carefully pour the wet ingredients into the bowl of dry ingredients. Gently stir with a spatula or wooden spoon until the mixture is just combined. It's alright if the batter remains slightly lumpy. If you’re using corn kernels, fold them in gently at this stage.
