1 cup Medjool dates, pitted

1 cup unsweetened shredded coconut

1/2 cup raw walnuts (or almonds)

1/2 cup rolled oats

2 tablespoons coconut oil, melted

2 tablespoons almond butter (or your preferred nut butter)

1 teaspoon pure vanilla extract

1/4 teaspoon sea salt

Optional toppings: Extra shredded coconut, cacao nibs, or chopped nuts

Prepare the Ingredients: If your Medjool dates are not pitted, remove the pits and chop them into smaller pieces. This will help them blend more easily in the next step.

    Blend the Base: In a food processor, combine the chopped dates, shredded coconut, raw walnuts, and rolled oats. Pulse the mixture until it is coarse and crumbly, making sure not to overprocess it into a paste.

      Add Wet Ingredients: Into the same food processor, add the melted coconut oil, almond butter, vanilla extract, and sea salt. Blend these ingredients until the mixture starts to come together into a sticky dough-like consistency. If it appears too dry, add a teaspoon of water or additional nut butter to help it bind.

        Prepare the Pan: Line an 8x8-inch baking dish (or a similarly sized pan) with parchment paper, ensuring that some overhang is available for easy lifting later.

          Press and Set: Pour the energy square mixture into the lined baking dish. Using your hands or the back of a spatula, press the mixture down firmly and evenly across the bottom of the pan.

            Optional Toppings: For added flavor and texture, sprinkle extra shredded coconut or cacao nibs over the top of the pressed mixture. Gently press these toppings into the mixture to help them adhere.

              Chill: Place the baking dish in the refrigerator and allow it to chill for at least 30 minutes to firm up.

                Slice and Serve: After chilling, remove the energy squares from the dish using the parchment paper overhang. Slice into squares or rectangles according to your preferred serving size and enjoy!
