1 lb (450g) salmon fillet, skin removed

1/4 cup sweet chili sauce

2 tablespoons soy sauce

1 tablespoon fresh ginger, minced

2 garlic cloves, minced

1 teaspoon sesame oil

1/2 cup red bell pepper, finely diced

1/2 cup cucumber, finely diced

1/4 cup fresh cilantro, chopped

1/4 cup green onions, thinly sliced

1 head of butter lettuce or romaine, leaves carefully separated

Lime wedges, for garnish

Optional: crushed peanuts, for topping

Marinate the Salmon: In a medium-sized mixing bowl, whisk together the sweet chili sauce, soy sauce, minced ginger, minced garlic, and sesame oil until combined.
