  • 2 medium sweet potatoes
  • 3 tablespoons olive oil
  • 1 teaspoon ground cinnamon
  • 1 teaspoon paprika
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 cup chopped pecans
  • 0.25 cup dried cranberries
  • none fresh chives or parsley

Instructions
 

  • Prepare the Sweet Potatoes: In a large mixing bowl, toss the sweet potato cubes with olive oil, cinnamon, paprika, honey (or maple syrup), salt, and black pepper. Ensure the sweet potato cubes are well-coated with the mixture.
  • Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C) for about 3-5 minutes while you prepare the sweet potatoes.
  • Air Fry the Potatoes: Once preheated, place the sweet potato cubes in the air fryer basket in a single layer. You may need to do this in batches to avoid overcrowding. Cook for 15-18 minutes, shaking the basket halfway through to ensure even cooking. The sweet potatoes should be tender and slightly crispy on the outside.
  • Add Nuts and Dried Fruit: After cooking, carefully remove the sweet potato bites from the air fryer and transfer them to a serving bowl. Add the chopped pecans and dried cranberries, gently tossing to combine.
  • Garnish and Serve: Sprinkle with fresh chives or parsley for a pop of color and additional flavor. Serve warm as a delicious side dish or snack.
