12 oz (340g) pasta of your choice (spaghetti or penne recommended)

1 cup sun-dried tomatoes, chopped (preferably packed in oil; drain excess oil if necessary)

3 cups fresh spinach, roughly chopped

3 cloves garlic, minced

1 small onion, finely chopped

1/2 cup heavy cream

1/2 cup grated Parmesan cheese (plus extra for serving)

1/4 cup olive oil

1 teaspoon red pepper flakes (adjust according to your spice preference)

Salt and pepper, to taste

Fresh basil leaves, for garnish

Cook the Pasta: In a large pot of salted boiling water, add your pasta and cook according to package instructions until al dente. Before draining, reserve 1 cup of the pasta cooking water. Once done, drain the pasta and set it aside.

    Sauté the Aromatics: In a large skillet over medium heat, pour in the olive oil. When the oil is hot, add the finely chopped onion. Sauté for about 3-4 minutes until the onion becomes translucent. Next, add the minced garlic and red pepper flakes, cooking for an additional 1-2 minutes until the mixture is fragrant.

      Add Sun-Dried Tomatoes: Mix in the chopped sun-dried tomatoes and allow them to sauté for 2-3 minutes, letting them infuse the oil with their rich flavor.

        Incorporate Spinach: Add the roughly chopped fresh spinach to the skillet. Cook until the spinach is wilted, approximately 2-3 minutes, stirring frequently to ensure even cooking.

          Combine with Cream: Pour in the heavy cream, stirring to incorporate all the ingredients. Let the mixture simmer for a couple of minutes until the sauce thickens. If the sauce becomes too thick, add reserved pasta water a little at a time until you achieve your desired consistency.

            Mix in Pasta: Add the drained pasta to the skillet with the sauce, gently tossing to coat the pasta evenly. Stir in the grated Parmesan cheese and season with salt and pepper to taste. If additional creaminess is desired, mix in more reserved pasta water.
