1 lb (450g) chicken breast, diced

1 cup fresh pineapple chunks (or canned, drained)

2 tbsp soy sauce

2 tbsp honey

1 tbsp rice vinegar

1 tsp garlic powder

1 tsp ginger paste (or fresh ginger, minced)

1 tsp sesame oil

1 package (16 oz) puff pastry sheets, thawed

1 egg (for egg wash)

1 tbsp sesame seeds (optional, for garnish)

2 green onions, finely chopped (for garnish)

Salt and pepper to taste

Prepare the Filling: In a medium mixing bowl, add the diced chicken and fresh pineapple chunks. Pour in the soy sauce, honey, rice vinegar, garlic powder, ginger paste, and sesame oil. Season with a pinch of salt and pepper. Mix all the ingredients thoroughly to ensure the chicken is well-coated in the marinade. Cover and let this mixture marinate for at least 20 minutes, allowing the flavors to meld beautifully.

    Cook the Chicken Mixture: Heat a tablespoon of oil in a large skillet over medium-high heat. Once hot, add the marinated chicken and pineapple mixture to the skillet. Cook for approximately 8-10 minutes, stirring occasionally, until the chicken is cooked through, golden, and slightly caramelized. Once done, remove from heat and let the mixture cool down slightly.

      Preheat the Oven: While the chicken filling cools, preheat your oven to 400°F (200°C). This ensures the pastry will puff perfectly when baked.

        Prepare the Puff Pastry: On a lightly floured surface, roll out the defrosted puff pastry sheets. Using a sharp knife or pizza cutter, cut each sheet into squares measuring about 4x4 inches.
