2 tablespoons cornstarch

3 tablespoons vegetable oil (divided)

4 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 bell pepper, sliced (any color)

1 cup broccoli florets

1 cup snap peas

1 medium carrot, thinly sliced

¼ cup honey

3 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon rice vinegar

1 teaspoon sesame oil

2 green onions, chopped (for garnish)

Prepare the Tofu: Start by pressing the tofu to eliminate excess moisture, which helps it become crispy during cooking. After pressing, slice the tofu into 1-inch cubes. In a mixing bowl, carefully toss the tofu cubes with cornstarch until each piece is evenly coated to enhance texture.
