2 cups cooked butternut squash, mashed until smooth

1 cup breadcrumbs (plus extra for coating)

1 large egg

½ teaspoon onion powder

½ teaspoon smoked paprika

Salt and freshly ground black pepper to taste

½ cup all-purpose flour (for dusting)

Prepare the Squash: Start by cooking the butternut squash. You have the option to either steam it or roast it at 400°F (200°C) until it becomes tender (approximately 25-30 minutes). Let it cool for a few minutes, then mash it in a bowl until it's completely smooth.

    Mix Ingredients: In a large mixing bowl, combine the mashed butternut squash, breadcrumbs, grated Parmesan cheese, the egg, chopped parsley, garlic powder, onion powder, smoked paprika, and a pinch of salt and pepper. Use a fork or your hands to mix everything thoroughly until all ingredients are well blended.

      Shape the Croquettes: With clean hands, take about 2 tablespoons of the mixture and mold it into small oval or round croquettes. Arrange the shaped croquettes on a baking sheet lined with parchment paper for easy handling.

        Coat the Croquettes: In a shallow dish, place some extra breadcrumbs. First, lightly dust each croquette in flour, shaking off any excess. Then, roll each in the breadcrumbs until fully coated. Return them to the baking sheet.
