Ingredients

4 boneless, skinless chicken breasts

2 cups fresh spinach, chopped

1 cup feta cheese, crumbled

½ cup cream cheese, softened to room temperature

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon lemon zest

Salt and freshly cracked black pepper to taste

2 tablespoons olive oil, divided

1 teaspoon paprika (optional, for extra flavor and color)

Fresh parsley, chopped, for garnish

Instructions

Preheat the Oven: Begin by preheating your oven to 375°F (190°C) to ensure it reaches the right temperature for baking the chicken.

Prepare the Stuffing: In a medium skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant. Stir in the chopped spinach and continue to cook until it wilts, which should take about 2-3 minutes. Remove the skillet from heat and let the mixture cool slightly.

Mix the Filling: In a spacious mixing bowl, combine the wilted spinach and garlic with the crumbled feta cheese, softened cream cheese, dried oregano, lemon zest, and a pinch of salt and pepper. Stir until all ingredients are thoroughly mixed and the filling is creamy.

Prepare the Chicken: Lay each chicken breast flat on a cutting board. Using a sharp knife, carefully cut a pocket into the thickest part of each breast, being cautious not to cut all the way through.

Stuff the Chicken: Generously fill each chicken breast pocket with the spinach and feta filling. If needed, secure the opening with toothpicks to prevent the delicious stuffing from leaking out during cooking.

Season and Sear: Season the outside of each stuffed chicken breast with salt, pepper, and paprika (if desired). In an oven-safe skillet, heat the remaining tablespoon of olive oil over medium-high heat. Sear the chicken breasts for about 3-4 minutes on each side until they reach a beautiful golden brown color.

Bake the Chicken: After searing, transfer the skillet directly to your preheated oven. Bake the stuffed chicken for 20-25 minutes, or until the internal temperature reads 165°F (74°C), ensuring the chicken is fully cooked.

Rest and Serve: Once baked, take the chicken out of the oven and let it rest for 5 minutes. This allows the juices to redistribute. Before serving, garnish with freshly chopped parsley to add a touch of color and freshness.

                    - Presentation Tips: Serve the stuffed chicken breasts on a bed of sautéed greens or alongside roasted vegetables. Drizzle with more olive oil and sprinkle additional parsley for a vibrant finish.
