Spinach and Feta Quesadillas

2 cups fresh spinach, chopped

1/2 cup crumbled feta cheese

1/2 cup shredded mozzarella cheese

1/4 cup diced red onion

1 clove garlic, minced

4 large flour tortillas

2 tablespoons olive oil (divided)

Salt and pepper, to taste

1/2 teaspoon red pepper flakes (optional, for a spicy kick)

Sour cream or Greek yogurt, for serving

Fresh salsa, for serving

Instructions
 

Sauté the Spinach: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Once hot, add the minced garlic and sauté for approximately 30 seconds until fragrant. Carefully add the chopped spinach along with a pinch of salt and pepper. Cook until the spinach is wilted, which should take about 2-3 minutes. Remove from heat and set the sautéed mixture aside.

    Combine the Filling: In a mixing bowl, combine the sautéed spinach, crumbled feta cheese, shredded mozzarella cheese, and diced red onion. If you desire some heat, sprinkle in the red pepper flakes. Mix thoroughly to ensure all ingredients are well incorporated. Taste the mixture, adjusting seasoning with more salt and pepper if necessary.

      Prepare the Quesadillas: Wipe down the skillet to remove any remnants, then return it to the stovetop over medium heat. Lightly coat the skillet with the remaining tablespoon of olive oil, either by spraying or drizzling it in. Place one tortilla in the skillet and evenly spread a quarter of the spinach and cheese filling over one half of the tortilla.

        Cook and Crisp: Carefully fold the tortilla in half to cover the filling. Allow it to cook for about 3-4 minutes, or until the bottom is golden brown and crispy.
