2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon ground cumin

Salt and black pepper, to taste

4 large whole wheat tortillas or wraps

1 cup fresh spinach leaves

1 medium avocado, sliced

1/2 cup diced ripe tomatoes

1/4 cup red onion, finely chopped

1/2 cup Greek yogurt (or a dairy-free alternative)

1 tablespoon freshly squeezed lemon juice

Optional: hot sauce for an extra kick

Preheat Your Oven: Begin by preheating your oven to 400°F (200°C). Prepare a baking sheet by lining it with parchment paper to prevent sticking.

    Season the Chickpeas: In a large mixing bowl, combine the drained and rinsed chickpeas with olive oil, smoked paprika, cayenne pepper, garlic powder, cumin, salt, and black pepper. Toss the mixture gently but thoroughly until all chickpeas are evenly coated with the seasoning.
