Spicy Grilled Pineapple Chicken

4 boneless, skinless chicken thighs

1 fresh pineapple, peeled and sliced into 1/2-inch thick rings

3 tablespoons olive oil

2 tablespoons soy sauce

1 tablespoon honey

2 teaspoons chili powder

1 teaspoon cayenne pepper (adjust according to spice preference)

3 cloves garlic, minced

Juice of 1 lime

Salt and freshly ground black pepper to taste

Fresh cilantro, chopped (for garnish)

Prepare the Marinade: In a large mixing bowl, whisk together the olive oil, soy sauce, honey, chili powder, cayenne pepper, minced garlic, lime juice, and a pinch of salt and pepper. Mix until all ingredients are thoroughly combined.

    Marinate the Chicken: Add the chicken thighs to the marinade, ensuring they are well-coated on all sides. Cover the bowl with plastic wrap or a lid and refrigerate for at least 30 minutes, and ideally up to 4 hours for deeper flavor infusion.

      Prepare the Grill: Preheat your grill to medium-high heat. For charcoal grills, wait until the coals are glowing white and evenly spread out for optimal grilling conditions.

        Grill the Chicken: Remove the marinated chicken from the fridge and take it out of the marinade (set aside the excess marinade). Place the chicken thighs directly on the grill. Cook for about 5-7 minutes per side, or until the internal temperature of the chicken reaches 165°F (75°C). To enhance flavor, brush the chicken with the reserved marinade halfway through the grilling process.
