1 lb ground chicken

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 bell pepper, diced (any color)

1 cup frozen corn, thawed

1 can (15 ounces) black beans, rinsed and drained

1 teaspoon chili powder

1 teaspoon cumin

½ teaspoon smoked paprika

Salt and pepper to taste

1 tablespoon fresh lime juice

8-10 large Romaine or butter lettuce leaves

Optional toppings: diced avocado, diced tomatoes, shredded cheese, fresh cilantro, sour cream

Instructions
 

Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the finely chopped onion and sauté for about 3-4 minutes until it becomes translucent and softened. Then, add the minced garlic and cook for another minute until fragrant, being careful not to burn it.
