Ingredients

1 can (15 oz) black beans, thoroughly rinsed and drained

1 cup corn kernels (can be fresh, frozen, or canned)

1 cup shredded sharp cheddar cheese

½ cup crumbled feta cheese

1 small red onion, finely chopped

2 cloves garlic, minced

1 teaspoon smoked paprika

½ teaspoon ground cumin

¼ teaspoon cayenne pepper (optional, for added heat)

1 tablespoon olive oil

4 large flour tortillas

Fresh cilantro leaves, for garnish

Salsa and sour cream, for serving

Instructions

Prepare the Filling: In a large skillet, heat the olive oil over medium heat. Once hot, add the chopped red onion and sauté for about 3-4 minutes, or until it becomes translucent. Incorporate the minced garlic and continue to cook for an additional 30 seconds, stirring frequently until the garlic is fragrant.

Mix Ingredients: Into the skillet, combine the rinsed black beans, corn, smoked paprika, ground cumin, and cayenne pepper (if using). Gently stir the mixture, allowing it to cook for about 5 minutes until heated through and well combined. Remove the skillet from heat and fold in the sharp cheddar and feta cheese until melted and evenly distributed.

Assemble Quesadillas: On a clean, flat surface, lay out the flour tortillas. Evenly distribute the black bean filling over one half of each tortilla, making sure to leave a small border at the edges. Carefully fold the other half of the tortilla over the filling to form a half-moon shape.

Cook Quesadillas: Clean the skillet with a paper towel, then return it to medium heat. Lightly coat the surface with a drizzle of olive oil or a cooking spray. Place the folded quesadilla into the skillet and cook for approximately 3-4 minutes on each side, or until they turn a golden brown and crispy, and the cheese inside is melted.

Serve: Once cooked, remove the quesadilla from the skillet and let it rest for a minute before slicing it into wedges. Garnish with fresh cilantro leaves, and serve warm alongside salsa and sour cream for dipping.
