Ingredients

1 cup digestive biscuits, finely crushed

1/2 cup unsalted butter, melted and slightly cooled

1 cup Greek yogurt (plain or vanilla flavor)

1/4 cup honey or maple syrup (adjust to taste for sweetness)

1 teaspoon pure vanilla extract

1 cup mixed berries (suggestions: strawberries, blueberries, raspberries, or blackberries)

1 tablespoon fresh lemon juice

1 tablespoon powdered sugar (optional, for sweetening the berries)

Fresh mint leaves for garnish (optional, for added freshness)

Instructions

Preheat the Oven: Set your oven to 350°F (175°C) to preheat.

Prepare the Crust: In a medium mixing bowl, combine the finely crushed digestive biscuits with the melted butter. Stir until the crumbs are thoroughly coated with butter. Press this crumb mixture firmly into the bottom of a muffin tin (silicone or non-stick works best) to form individual tartlet crusts. Bake in the preheated oven for 8-10 minutes, or until the crusts turn golden brown. Once done, remove them from the oven and let them cool completely in the tin.

Make the Yogurt Filling: In a separate bowl, combine the Greek yogurt, honey or maple syrup, and vanilla extract. Whisk until the mixture is smooth and homogenous. Taste the filling and adjust the sweetness with more honey or syrup if desired.

Prepare the Berries: In a different bowl, mix the fresh berries with lemon juice and powdered sugar (if using). Use a fork to gently smash the berries, creating a chunky yet juicy mixture. Take care not to over-squish them; you want some texture to remain.

Assemble the Tartlets: Once the crusts have cooled, carefully spoon the yogurt filling into each tartlet shell, filling them about three-quarters of the way. Then, generously top each with the smashed berry mixture, ensuring that some berries spill over the edges for a rustic look.

Chill and Serve: Place the assembled tartlets in the refrigerator and let them chill for at least 1 hour; this will help them set and enhance their flavor. Before serving, garnish each tartlet with fresh mint leaves for a vibrant touch.

Enjoy: Serve the tartlets chilled and revel in the delightful combination of creamy yogurt and fresh, juicy berries!
