Ingredients

1 lb ground turkey

1 medium onion, diced

3 cloves of garlic, minced

1 can (15 oz) white beans (such as cannellini or great northern), drained and rinsed

1 can (14.5 oz) diced tomatoes with green chilies

2 cups chicken broth

1 cup frozen corn

1 tablespoon olive oil

1 tablespoon ground cumin

2 teaspoons chili powder

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust to your spice preference)

Salt and black pepper to taste

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions

Sauté the Turkey: In a large skillet over medium heat, pour in the olive oil. When the oil is shimmering, add the ground turkey. Cook, breaking it up with a spatula, until it is browned and fully cooked through, about 5-7 minutes. After cooking, carefully drain any excess fat from the skillet.

Sauté Onions and Garlic: In the same skillet, introduce the diced onions to the turkey. Sauté until the onions have softened and turned translucent, about 3-4 minutes. Add the minced garlic, and continue to sauté for an additional 30 seconds, or until the garlic is aromatic but not browned.

Combine the Ingredients: Transfer the cooked turkey mixture to a slow cooker. Stir in the rinsed white beans, diced tomatoes with their juices, chicken broth, frozen corn, ground cumin, chili powder, smoked paprika, cayenne pepper, and season with salt and black pepper. Ensure all ingredients are well combined.

Cook: Cover the slow cooker with its lid and set it to cook on low for 6-8 hours or on high for 3-4 hours. If possible, stir occasionally to help meld the flavors together.

Taste and Adjust: When the cooking time is up, taste the chili and make adjustments to the seasoning if needed. Add more cayenne pepper if you like a spicier kick, or an extra pinch of salt for flavor enhancement.

Serve: Ladle the warm chili into bowls and finish by garnishing with a sprinkle of fresh chopped cilantro. Serve with lime wedges on the side to add a refreshing burst of acidity.

Enjoy!: For a hearty meal, pair your comforting white turkey chili with cornbread or crunchy tortilla chips.
