2 pounds Yukon Gold potatoes, peeled and cut into 1-inch cubes

1 whole head of garlic

4 tablespoons unsalted butter, softened

1 cup heavy cream (or substitute with whole milk for a lighter option)

1 teaspoon salt (adjust to taste)

1/2 teaspoon freshly cracked black pepper (adjust to taste)

2 tablespoons fresh chives, finely chopped (for garnish)

Olive oil (for drizzling)

Instructions
 

Roast the Garlic:

    - Preheat your oven to 400°F (200°C).

      - Carefully slice the top off the entire head of garlic to reveal the individual cloves inside. Drizzle with a bit of olive oil and wrap the head snugly in aluminum foil.

        - Place the wrapped garlic in the preheated oven and roast for 30-35 minutes, or until the cloves become soft and fragrant. Once done, remove from the oven and allow it to cool for a few minutes before handling.

          Cook the Potatoes:

            - While the garlic is roasting, fill a large pot with water and season generously with salt. Bring the water to a rolling boil.

              - Add the cubed Yukon Gold potatoes to the boiling water and cook for 15-20 minutes, or until they are tender enough to be pierced easily with a fork.

                - Once cooked, drain the potatoes well and return them to the pot to keep warm.

                  Prepare the Mashed Potatoes:

                    - Squeeze the roasted garlic cloves from their papery skins directly into the pot with the warm potatoes. You should have about 5-7 cloves to add a delightful roasted flavor.

                      - Incorporate the softened butter into the potatoes and begin mashing them with a potato masher or, for a silkier result, use a ricer.

                          Skillet Finish:
