Ingredients

8 oz elbow macaroni

2 cups frozen peas (or use fresh peas when available)

3 tablespoons unsalted butter

3 tablespoons all-purpose flour

2 cups whole milk

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

1/4 teaspoon freshly ground black pepper

1 1/2 cups sharp cheddar cheese, shredded

1/2 cup grated Parmesan cheese

1/2 cup breadcrumbs (optional, for topping)

Fresh parsley, chopped for garnish (optional)

Salt, to taste

Instructions

Cook the Pasta: Bring a large pot of salted water to a rolling boil. Add the elbow macaroni and cook according to the package instructions until al dente. During the last 2 minutes of cooking, add the frozen peas. Drain the pasta and peas together, then set aside.

Make the Cheese Sauce: In a spacious skillet over medium heat, melt the unsalted butter. Once melted and bubbling, whisk in the all-purpose flour. Cook the mixture for 1-2 minutes, stirring continuously, until it becomes lightly golden and has a smooth texture.

Add Milk and Seasonings: Gradually pour in the whole milk while whisking vigorously to avoid lumps. Keep cooking and whisking the mixture until it thickens and coats the back of a spoon, approximately 3-5 minutes. Stir in the garlic powder, onion powder, smoked paprika, and black pepper. Taste the sauce and adjust seasoning with salt as needed.

Incorporate the Cheese: Lower the heat to a gentle simmer, then add the shredded sharp cheddar cheese and grated Parmesan cheese to the sauce. Stir continuously until both cheeses have melted and the sauce is creamy and smooth.

Combine Pasta and Sauce: Add the drained macaroni and peas into the cheese sauce, mixing gently until every piece of pasta is well-coated. If the mac and cheese is thicker than desired, feel free to add a splash of milk to loosen the consistency.

Optional Breadcrumb Topping: For an extra crunch, preheat your oven to 350°F (175°C). Transfer the mac and cheese mixture into a lightly greased baking dish, spreading it evenly. Sprinkle breadcrumbs on top and bake for 15-20 minutes or until the top is golden brown and bubbly.

Serve: If desired, garnish with fresh, chopped parsley to add a pop of color. Serve directly from the skillet or baking dish, and enjoy your comforting Cheesy Mac & Peas Delight!
