Ingredients

4 ripe peaches, halved and pitted

2 tablespoons extra virgin olive oil

Sea salt and freshly cracked black pepper, to taste

8 ounces burrata cheese

1 cup arugula or a mix of your favorite salad greens

1 tablespoon balsamic glaze

Fresh basil leaves, for garnish

Optional: 1/4 cup toasted pine nuts or walnuts for added crunch

Instructions

Preheat the Grill: Start by preheating your grill to medium-high heat, aiming for a temperature of about 400°F (200°C).

Prepare the Peaches: Lightly brush the cut sides of the peach halves with extra virgin olive oil. Season them with a pinch of sea salt and some freshly cracked black pepper to enhance their natural sweetness.

Grill the Peaches: Once the grill is hot, place the peach halves cut-side down. Grill for 4 to 5 minutes until you can see beautiful grill marks and the peaches are tender, yet still maintain their shape.

Assemble the Platter: While the peaches are grilling, spread the arugula or mixed greens evenly on a large serving platter. Once the peaches are done, carefully transfer them on top of the greens.

Add the Burrata: Tear the creamy burrata cheese into bite-sized pieces and scatter them over the platter, letting them nestle amongst the grilled peaches.

Finish the Dish: Drizzle the balsamic glaze generously across the entire platter, and adorn with fresh basil leaves. For a delightful crunch, optionally sprinkle the toasted pine nuts or walnuts on top.

Serve: Present your vibrant and beautifully arranged platter, and savor it as a refreshing appetizer or a light, satisfying summer meal.
