1 medium onion, diced

2 cloves garlic, minced

1 carrot, grated

1 can (28 oz) crushed tomatoes

2 cups vegetable broth

1 teaspoon sugar (optional, to taste)

1 teaspoon dried basil

1 teaspoon dried oregano

Salt and pepper, to taste

½ cup heavy cream

Fresh basil leaves, for garnish

For the Grilled Cheese:

4 slices of your favorite bread (sourdough or whole grain recommended)

1 cup shredded cheese (cheddar or a blend of your favorites)

2 tablespoons butter

Instructions
 

Prepare the Soup:

    - In a large pot, heat the olive oil over medium heat.

      - Add the diced onion and sauté for about 5 minutes, or until it becomes soft and translucent.

        - Stir in the minced garlic and grated carrot, continuing to cook for an additional 2 minutes until fragrant.

          - Pour in the crushed tomatoes and vegetable broth, stirring well to combine all ingredients.

            - Add the optional sugar, dried basil, dried oregano, salt, and pepper. Bring the mixture to a gentle simmer and let it cook for approximately 20 minutes, allowing the flavors to meld beautifully.

              Blend the Soup:

                - After the soup has simmered, use an immersion blender to puree the mixture until it’s smooth and creamy. If you do not have an immersion blender, carefully transfer the soup in batches to a stand blender and blend until smooth. Return it to the pot.

                  Make it Creamy:
