Ingredients

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

1 can (28 oz) crushed tomatoes

2 cups vegetable or chicken broth

1 teaspoon sugar (optional, to balance acidity)

Salt and freshly ground black pepper, to taste

1 cup heavy cream or coconut milk (for a dairy-free option)

1/2 cup fresh basil leaves, loosely packed and chopped

Crusty bread or grilled cheese sandwiches for serving (optional)

Instructions

Sauté the Aromatics: In a large pot, warm the olive oil over medium heat. Add the chopped onion and sauté for about 5-7 minutes, or until the onion becomes translucent and soft. Stir in the minced garlic and continue cooking for another 1-2 minutes, until the garlic is fragrant but not burnt.

Add Tomatoes and Broth: Pour in the crushed tomatoes along with the vegetable or chicken broth. If you opted for sugar, sprinkle it in now to help counteract any acidity from the tomatoes. Season with a pinch of salt and freshly ground black pepper. Stir the mixture thoroughly to combine all the ingredients.

Simmer: Raise the heat slightly to bring the mixture to a gentle boil. Once boiling, reduce the heat back down to low and allow the soup to simmer uncovered for about 15-20 minutes. This simmering time is key to developing the flavors.

Blend: Using an immersion blender, puree the soup directly in the pot until you achieve a smooth consistency. If you don’t have an immersion blender, carefully ladle the soup into a traditional blender in batches and blend until smooth. Return the pureed soup to the pot.

Add Cream and Basil: Incorporate the heavy cream or coconut milk into the soup, stirring until well blended. Add the chopped basil leaves to the pot. Allow the soup to cook for an additional 5 minutes to heat through and meld the flavors together. Taste the soup and adjust the seasoning with additional salt or pepper if desired.

Serve: Ladle the rich, creamy soup into bowls. Garnish with extra fresh basil leaves for a pop of color and flavor if desired. Serve with crusty bread or alongside classic grilled cheese sandwiches for a truly comforting meal.
