1 cup cooked ham, diced into small pieces

2 cups shredded sharp cheddar cheese, divided

1 cup whole milk

3 tablespoons unsalted butter

1 teaspoon onion powder

Salt and pepper, to taste

1/2 cup breadcrumbs (optional, for added crunch on top)

    Cook the Cauliflower: In a large pot, fill it with water and add a generous pinch of salt. Bring the water to a rolling boil. Once boiling, gently add the cauliflower florets and cook for approximately 5-7 minutes. The florets should be tender yet still retain a slight bite. Once done, drain the cauliflower and set it aside.

      Make the Cheese Sauce: In a medium saucepan set over medium heat, melt the unsalted butter. Once melted, add the flour and stir with a whisk, cooking for about 1-2 minutes until it takes on a light golden hue and forms a roux.
