1 lb large shrimp, peeled and deveined

4 cloves garlic, minced

1/2 cup unsalted butter (1 stick)

1/4 cup olive oil

1/2 cup vegetable broth (as a substitute for white wine)

1 tbsp fresh lemon juice

Zest of 1 lemon

1/2 tsp red pepper flakes (adjust for spice preference)

1 cup cherry tomatoes, halved

1/4 cup fresh parsley, chopped (for garnish)

1 cup mozzarella cheese, shredded

1/2 cup Parmesan cheese, grated

Salt and black pepper, to taste

Optional: Fresh basil leaves for garnish

Cook the Pasta: Begin by preheating your oven to 350°F (175°C). In a large pot filled with salted boiling water, cook the penne pasta following the package instructions until al dente. Once cooked, drain the pasta and set it aside for later use.

    Sauté the Shrimp: In a large skillet set over medium heat, combine the unsalted butter and olive oil. Once the butter has melted, add the minced garlic and sauté for about 1 minute until it becomes fragrant. Next, introduce the shrimp to the skillet, seasoning them with red pepper flakes, salt, and black pepper. Cook for approximately 3-4 minutes, or until the shrimp turn pink and opaque.

      Deglaze the Pan: Carefully pour in the vegetable broth and fresh lemon juice, making sure to scrape up any browned bits from the skillet's bottom. Allow this mixture to simmer for about 2-3 minutes until it slightly reduces and melds the flavors together.

        Combine Ingredients: Gently fold the halved cherry tomatoes and the cooked penne pasta into the shrimp mixture. Stir in the lemon zest, ensuring everything is well incorporated and evenly coated.
