Ingredients

8 slices of sourdough bread

8 slices of sharp cheddar cheese

8 slices of Gruyère cheese

1 cup roasted butternut squash, mashed

1 medium apple, thinly sliced (preferably Honeycrisp or Granny Smith)

1 cup fresh spinach leaves

1/2 teaspoon ground cinnamon

1/4 cup unsalted butter, softened

1/4 teaspoon salt

1/8 teaspoon black pepper

Optional: balsamic glaze for drizzling

Instructions

Preheat the Oven: Start by preheating your oven to 400°F (200°C). To make cleanup easier, line a baking sheet with parchment paper.

Prepare the Squash Mixture: In a medium mixing bowl, combine the mashed butternut squash with ground cinnamon, salt, and black pepper. Stir until all the ingredients are well blended, creating a flavorful spread. Set aside.

Assemble the Sandwiches: On the prepared baking sheet, place four slices of sourdough bread. Generously spread the butternut squash mixture over each slice for an even coat.

Layer with Cheese and Fresh Ingredients: On top of the butternut squash, place two slices of sharp cheddar and two slices of Gruyère cheese on each sandwich. Next, evenly distribute the thin apple slices and fresh spinach leaves over the cheese.

Complete the Sandwiches: Top each open-faced sandwich with the remaining slices of sourdough bread. For a golden crust, spread a layer of softened butter over the tops of the bread slices.

Bake the Melts: Place the sheet pan into the preheated oven and bake for 15-20 minutes. You’re looking for the bread to turn golden brown and the cheese to melt perfectly. About halfway through the baking time, carefully flip each sandwich to ensure they crisp up evenly.

Serve and Garnish: Once out of the oven, consider drizzling the melts with optional balsamic glaze to enhance the flavor with a touch of sweetness and tanginess. For easy serving, cut each sandwich in half.

Enjoy: Serve the Harvest Grilled Cheese Melts warm and share this cozy dish with your friends and family for a scrumptious meal or delightful snack!
