1 lb (450g) store-bought gnocchi

8 oz (225g) cremini mushrooms, cleaned and sliced

2 cups kale, stems removed and roughly chopped

1 red bell pepper, diced into bite-sized pieces

4 cloves garlic, minced

1/4 cup extra virgin olive oil

1 tsp smoked paprika for a rich flavor

1/2 tsp red pepper flakes (adjust based on your heat preference)

Salt and freshly ground black pepper to taste

1/2 cup freshly grated Parmesan cheese (optional, for added richness)

Fresh parsley, finely chopped for garnish (optional)
