2 medium sweet potatoes, peeled and diced into 1-inch cubes

2 tablespoons olive oil, divided

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon ground cumin

½ teaspoon salt

¼ teaspoon black pepper

1 cup black beans, rinsed and drained

1 cup corn (fresh or frozen, thawed if frozen)

1 avocado, diced

½ cup cherry tomatoes, halved

¼ cup fresh cilantro, chopped

¼ cup Greek yogurt or sour cream (for topping)

Lime wedges (for serving)

Preheat the Oven: Begin by preheating your oven to 425°F (220°C). This will ensure your sweet potatoes roast perfectly.

    Roast the Sweet Potatoes: In a large mixing bowl, combine the diced sweet potatoes with 1 tablespoon of olive oil, smoked paprika, garlic powder, onion powder, salt, and black pepper. Toss until the sweet potatoes are evenly coated. Spread them out in a single layer on a baking sheet. Roast in the preheated oven for approximately 25-30 minutes. Flip the sweet potatoes halfway through to achieve an even, tender, and slightly crispy texture.

      Cook the Ground Turkey: While the sweet potatoes are roasting, heat the remaining tablespoon of olive oil in a large skillet over medium heat. Add the ground turkey and cook for about 6-8 minutes. Use a spatula to break up the turkey as it cooks until it’s browned and fully cooked through.
